Culinary Architects: Unveiling the Masterminds Behind The Langham’s Bangkok Debut

Langham Hospitality Group has unveiled an ambitious and star-studded food and beverage programme for The Langham, Custom House, Bangkok, set to open this December. By transforming the historic riverside landmark into a premier social destination, the luxury hotel group is positioning its new property as a cornerstone of Bangkok’s vibrant culinary scene.

The programme features an impressive roster of world-class talent tasked with defining the atmosphere of the restored Custom House complex. Leading the kitchen brigade is Executive Chef Phukvarun “Golf” Watchmon, who brings over 15 years of high-level experience in Bangkok’s most prestigious kitchens to oversee the hotel’s broader culinary vision.

“Established in 1888, Custom House once served as Thailand’s gateway to the world,” said Bob van den Oord, CEO of Langham Hospitality Group. “As it begins its next chapter, that spirit of exchange and connection is being carried forward through restaurants and bars shaped by exceptional talent, thoughtful craft and a deep respect for history.”

The culinary highlights begin with Roi Chak Sam, led by Chef Thitid “Ton” Tassanakajohn, the culinary visionary behind Le Du, which claimed the number one spot on Asia’s 50 Best Restaurants 2023. The restaurant will offer a contemporary interpretation of royal Thai cuisine inspired by the reign of King Rama V, utilizing rare seasonal produce to honor the building’s heritage.

In the heart of the property, The Cotton Room will serve as an all-day social hub. By morning, it offers breakfast overlooking the Chao Phraya River, transitioning into The Langham’s legendary signature Afternoon Tea—curated by Executive Pastry Chef Prot Stitpittayayut—and evolving into a modern Indian dining concept by night, developed in collaboration with Chef Garima Arora of the two-MICHELIN-starred restaurant Gaa.

Cantonese fine dining will find a home in T’ang Court, a brand synonymous with The Langham’s global culinary excellence. Chef Ricky Lin Quoping, arriving from the three-MICHELIN-starred original in Hong Kong, will helm the venue, focusing on high-precision Cantonese techniques, signature barbecued meats, and handcrafted dim sum.

Complementing these dining experiences is Crowntail, a multi-zone cocktail bar perched on the riverfront. Bar Manager Tom Hearn, formerly of London’s iconic The American Bar at The Savoy and Bangkok’s renowned Vesper, will lead the bar’s creative direction. Spanning indoor lounges, a rooftop area, and a private pier, Crowntail aims to provide an expressive, high-energy cocktail experience that blends British hotel bar pedigree with local Thai flair.

With this ensemble of award-winning chefs and mixologists, The Langham, Custom House, Bangkok is poised to bridge the gap between historic grandeur and modern lifestyle, aiming to become the premier place where Bangkok residents and international visitors gather to celebrate by the river.
