Singapore Airlines Elevates In-Flight Dining with Chef Monica Galetti’s New Autumn Collection
Singapore Airlines has officially unveiled its highly anticipated seasonal autumn menu, crafted in collaboration with renowned guest chef Monica Galetti. Designed to bring the warmth and comfort of the season to the skies, the limited-edition culinary selection will be available to passengers in Suites, First Class, and Business Class on flights departing from London Heathrow, London Gatwick, and Manchester.
Running from September 1 through November 30, 2026, the menu celebrates the transition of the season, utilizing a rich palette of autumnal ingredients including squash, black truffle, chestnuts, and savory bean ragouts.
A Seasonal Masterclass at 35,000 Feet
For travelers in Suites and First Class, the four-course journey begins with a delicate King Crab appetizer dressed with Furikake, Artichoke, and Endive with Black Truffle. The soup course features a velvety Caramelised Autumn Squash and Black Truffle infusion. The main event is a decadent Slow Braised Beef Cheek in a Port and Red Wine reduction, served with burnt butter mash. The meal concludes on a sweet note with a White Chocolate Mousse, perfectly balanced with passionfruit sauce and spiced Biscoff.
Business Class passengers will also enjoy the exquisite King Crab starter, followed by a hearty main of Ossobuco paired with a rich Borlotti Bean and Saffron Ragout. The experience is finished with a traditional English Blackberry Treacle Tart, complemented by a mascarpone ripple.
“Autumn, like spring, is a season of transition, inviting comfort to the finer details,” said Chef Monica Galetti. “Each dish brings a bold yet refined experience to what fine dining can be in the air.”
