United Airlines is set to elevate its international inflight dining once again, announcing a new menu rotation born from its ongoing collaboration with the Emmy Award-winning Netflix series Chef’s Table. Following a successful inaugural launch that saw customer satisfaction scores climb significantly, the airline is introducing 30 new, chef-curated dishes across its United Polaris® business class cabins.
The expansion comes as part of a massive $150 million investment United has poured into its food and beverage program throughout 2025. Since the partnership debuted on August 1, more than 60,000 passengers have experienced the Chef’s Table meals, with feedback ratings trending nearly 20 points higher than traditional pre-ordered business class fare.
“The strong response to Chef’s Table reinforces the value of bringing perspectives of world-class chefs onboard in a way that reflects the destinations we serve,” said Aaron McMillan, United’s Managing Director of Hospitality Programs. “With this next menu rotation, we’re building on that foundation, introducing new flavors and chef-driven dishes that bring a greater sense of culinary discovery to the inflight experience.”
The new menu, which will be available from November 1 through December 31, highlights culinary talent from 11 renowned chefs across ten global cities, including United’s U.S. hubs and international gateways like London, São Paulo, and Tokyo. Each menu is specifically designed to reflect the food culture of the departure city.
Highlights from the new rotation include Nancy Silverton’s spiral meat lasagna in Los Angeles, Chef Jenner Tomaska’s roasted chicken breast with mushroom mousseline in Chicago, and Chef Manu Buffara’s roasted beef with bean pirao in São Paulo. In London, passengers can sample Chef Tomos Parry’s grilled halibut, while those departing from Tokyo can enjoy Chef Tashi Gyamtso’s ginger soy glazed chicken.
Justin Connor, President of Chef’s Table Projects, emphasized that the collaboration is about more than just food; it is about storytelling. “Our collaboration with United has been a great way to introduce millions of travelers to the incredible chefs we work with and the stories behind their food,” Connor said.
To bridge the gap between the plate and the destination, United is supplementing the meal service with exclusive behind-the-scenes content on seatback entertainment systems. Passengers can watch segments detailing the creative processes of these culinary masters or listen to episodes of the Chef’s Table: Talks podcast while they dine.
United Polaris customers can pre-order these special menus via the United website or mobile app starting five days before their flight and up to 24 hours prior to departure. The program is slated to continue rotating menus seasonally through 2027, marking a long-term commitment by the carrier to transform its business class dining into a “culinary discovery” at 35,000 feet.
